Gluten free banana muffins

Ingredients:

– 2 bananas

– 4 eggs

– 1/3 cup coconut flour

– 1/3 cup melted coconut oil

– 1 tsp baking soda

– dark chocolate chips ( as many as you like)

Mix all ingredients together and pour evenly into greased muffin tins. Bake at 400 for 15 -20 minutes (check them after 15 minutes because mine got burned a little on top at 20! )

Easy salmon with quinoa salad

Ingredients

– 1 cup quinoa rinsed

– 2 salmon steaks

– 1 cucumber chopped

– 2 tomatoes chopped

– 1 pepper of choice chopped

– feta cheese or cheddar cheese

– coconut oil for cooking

– salt and pepper

Cook quinoa according to package. Set aside. Chop cucumber, peppers, tomatoes and cheese for salad. Coat a pan with a decent amount of coconut oil and a little olive oil. Salt and pepper your salmon and place it skin side down in the hot frying pan. Shake the pan so salmon doesn’t stick. Cook for 5 minutes then flip for another 5 mins. Reduce temp and cook for another 5 minutes on the same side. Cook time will be dependent on the thickness of the salmon. Mix salad together and add a little olive oil, vinegar and salt and pepper. Serve and enjoy! ☺️

Easy pizza crustpizza dough

Ingredients

– 1 package dry yeast (2-3 tsp)

– 1 tsp sugar

– 1 cup of warm water

– 2 1/2 cups self raising flour

– 3 tablespoons olive oil

– 2 tsp rock salt

Method

Heat oven to 400 degrees. Boil water in a kettle and allow to sit until warm.  Put yeast and sugar in a bowl and pour in warm water. Allow the mixture to stand for 5-10 minutes. Add flour 1/2 a cup at a time until all the flour is mixed in. Add 2 tablespoons of olive oil to dough mixture, use the rest of the oil to grease the pizza pan. Mix everything together and form dough into a ball. Roll dough out on a floured surface and place in pizza pan. Add sauce, toppings and cheese. Bake for 15 -20 minutes, rotating the pizza halfway through, then turn the oven on grill for 2 minutes. Serve with a side salad and enjoy!

Coconut Cauliflower Rice with a kick!

Ingredients

– 3 tablespoons coconut oil

– 1 head of cauliflower

– 1 cup coconut milk ( I think this adds more coconut flavour)

– salt and pepper to taste

– pinch of chili flakes to add heat

– 1/4 cup chopped roasted almonds

Method

Break cauliflower into pieces and pulse in blender or food processor until fine. Melt coconut oil in pot and add cauliflower then add coconut milk. Stir for about 5 minutes, add salt and pepper to taste. Turn the heat off and allow to sit for 5 minutes.  Roast almonds on medium heat until brown. Remove from heat and chop once they are cool. Add chilis to cauliflower and mix. Serve and top with chopped almonds. Enjoy!

Easy Brazilian Cheesy Bread

– 1 egg

– 1/4 cup olive oil

– 2/3 cup milk  (can use almond milk if you like)

– 1 1/2 cups tapioca flour

– 1 tsp salt

– 1/2 cup – 1 cup cheese (parmesan, cheddar, asiago)

I like mine really cheesy to feel free so experiment by adding more or less cheese!

Grease a muffin tin with oil and set aside. Pre-heat oven to 400F. Put all ingredients, except for the cheese, in the blender or beat with hand held beaters. If you accidentally put the cheese in already… don’t worry I did too. The batter is very forgiving. Pulse until all ingredient are mixed well, about 30 seconds. Add in the cheese and pulse for 10 seconds. I know you are thinking, “ This batter is super loose!!!” Yes I know it is but it is meant to be that way 🙂 Divide the batter equally between the muffin tins. Bake at 200 degree for 15 – 20mins until golden brown.
